Vegan Donuts: Breakfast of Champions!
Kendra loves donuts. I'm talking super loves them. I'm the chef in our home, but she is definitely the baker. I don't know why, but I have a serious aversion to measuring things and that doesn't work out so well when you're dealing with the delicate science of baking. So when we bought our house and finally unpacked and settled in, I really wanted to get a donut pan so to surprise her with donut brunch. I know, I know: it's not a donut unless it's fried. I hear you, but have you ever tried to fight with scalding hot, boiling, bubbling grease first thing in the morning before your second cup of coffee whilst wrangling a blind kitten and his canine and feline cohorts in crime? I rest my case.
I found the recipe for these on Chocolate Covered Katie's website, which is devoted to healthy comfort food. If you haven't heard of her, you should check out her blog. There have been many a vegan baked good inspired by her eaten in our household. I've tweaked this recipe according to our own tastes; make your favorite flavors and let us know how they turn out!
INGREDIENTS
1 tsp apple cider or white vinegar
2/3 cup soy, almond, rice, or coconut milk
1 tsp pure vanilla extract
3 tbsp coconut or vegetable oil
1 cup all-purpose flour
1 1/2 tsp baking powder
1/3 cup + 2 additional tbsp. organic pure cane sugar
1/4 tsp salt
optional toppings: sprinkles, shredded coconut, confectioner's sugar, etc.
INSTRUCTIONS
Combine first four ingredients in a small bowl, and whisk well. Preheat oven to 350 F and grease a donut pan if you have one. (If you don’t have a donut pan, you can cook in a mini muffin tin for donut holes). In a large measuring bowl, combine all remaining ingredients and stir very well. Now pour wet into dry and immediately pour into the pan. Bake 15 minutes, then allow to cool before removing. Top these babies with jam, or chocolate frosting, or glaze.
The result is a light, fluffy, baked donut that doesn't exactly taste like it's from Dunkin' Donuts but is delicious (and much healthier) nonetheless.
